day 42: gluten and dairy free christmasOh my darling...13 November 2011Not everyone dreams of hot roast meats smothered in rich gravy sauce for Christmas dinner. In fact, the call to make Christmas, lighter, easier, and to accommodate the ever-growing dietary requirements of the extended family are ensuring a move away from the traditional meat and 3 veg type meal. I wanted to include a menu for Christmas Day that did accommodate dietary needs. That was about being light and easy, that I could imagine the day sitting in the sunshine, watching the kids play in the backyard, instead of stressing and fussing in the kitchen. And where better to look than Emma Galloway of My Darling Lemon Thyme for inspiration? Her recipes have broken me out of the mundane, and to try things I never would have before. Why not let these recipes break a few of your boundaries too? Links to the recipes: Spring fennel, pear and pecan salad Gluten free courgette, garlic and lemon spaghetti Pineapple with lemon balm and mint And for the perfect refreshing drink: Sparkling apple, pear and ginger juice PS, the photos on Emma’s blog of her recipes are so beautiful, I had to share, so make sure you scroll all the way down to see what this all looks like! |
