Mini Christmas cakes

Ho, ho, ho! Santa is coming. These Christmas wonders make great presents for family and friends and would be excellent for gifts for teachers or workmates.  Not so heavy on the Christmas fruit, this recipe is a great way to introduce kids to a more ‘lighter’ version of a traditional Christmas cake. You and the kids can make and decorate them together and then enjoy giving them away. We hope you enjoy them!

Mini Christmas cakes

 

Mini ​Christmas Cakes

(Makes 12 mini cakes)
500g sultanas
zest from 1 lemon
250g butter
1 cup of sugar
1 tsp almond essence
3 eggs, beaten
2 heaped cups flour
1 tsp baking powder
 
For decoration (optional):
fondant icing
green food colouring
gift ribbon
 
  1. Preheat oven to 180°C. Grease a muffin tray (square or round).
  2. Place sultanas and zest in saucepan. Add just enough water to cover, and bring to boil. Boil for 5 minutes.
  3. Remove from heat. Drain off water.  Add butter to hot sultana mixture and stir with wooden spoon until melted.
  4. Stir in egg mixture and almond essence, then add flour and baking powder. Stir well.
  5. Fill each muffin space with mixture. Cook for 30 minutes.
  6. Cool in tins for 10 minutes then run a knife around the inside edge and turn cakes out.
