Easy Chicken & Asparagus PieRecipe and photo from Jasmine Leaning 25 October 2011 This is a family favourite of ours and is really quick and easy to make up. Unfortunately I can’t remember exactly where I got the recipe from. Ingredients 4 boneless chicken thighs (cut into bite sized pieces) (or about 1 large chicken breast) 1 bay leaf 1 small onion (chopped) 1 can asparagus 6 T sour cream (or more) 1 T wholegrain mustard (I normally use honey wholegrain) 3 sheets flaky puff pastry Salt & pepper to taste Milk to glaze Heat some oil in a fry pan, add bay leaf and onions and fry onions for about 2 minutes or until lightly browned. Add the chicken and stir fry until chicken is cooked. Add salt and ground pepper to taste. Remove off heat and let cool slightly. Remove bayleaf. Stir in the wholegrain mustard and sour cream. You can put more sour cream if you like a more creamy pie. Gently stir in the tin asparagus. Pour ingredients onto pastry and seal. Brush milk on top of pie then bake in the oven for approx 20 mins (until golden on top) at 200C.
